Is it possible to have an editable grid such as the one depicted here where you can change the parent of a child item via drag and drop (or some other similar mechanism not requiring a postback)?

This is not supported out-of-the-box by our web grid, however you may be interested in reviewing the sample projects from the following code library entry:

and extend them in a custom manner to attain the functionality you are searching for.
