I can not find this Popup Edit Forms in the following online examples: http://www.telerik.com/DEMOS/ASPNET/prometheus/Grid/Examples/GeneralFeatures/PopUpEditForm/DefaultCS.aspx. Can you help?

Can I set a default value for a textbox field on the Popup Edit Form? Or Can I validate fields on the Form?

Generally PopUp edit form is just a visual representation of auto-generated, template or UserControl edit form. You can check relevant examples:
