In this case, you can remove the setting altogether, and simply style the header cell of interest. More information on how to get a reference to the cell, you can find in the following article. Once you get the specific cell, you can style it. Additionally, in the ItemCommand/SortCommand, you can get more information on the column currently being sorted.
