Is there a way to list the other data like description, location, or even organizer or invitees with the Exchange Provider as a details view?

Hello Sean Brown,
You should be able to read the additional details for the appointments using the EWS API. This book is the best guide for the API that we've found so far.
You can use custom attributes to store the additional fields and appointment / form templates to display and
edit them. I hope this helps.
