A theme in our controls can be changed by setting the "Skin" server property with one of these inbuilt skins. For example the BlackMetroTouch skin can be set by the following:

We are not sure that we have understood the sentence "change default theme (overall shape)" in the right way. Actually our skins has differences only in their colors, not in their shape. The exception is Material theme, where breadcrumb steps are rendered as circles. If you would like to change shape of steps, it is necessary to apply a custom CSS.
