Hello Tyler,
With the default configuration in our filtering demo you won`t be able to sort the "Line" rows by the "Quantity" values in "M-Class" column. RadPivotGrid allows only columns and rows sorting. Sorting by values in the table itself is not available. You could however use the "Quantity" as row or column fields and then sort by the values.

Is there a feature in development or planned for future development where sorting based on the data in the pivot grid would be possible?

Currently there are no plans for implementing such functionality for the RadPivotGrid, but you could add your feature request in our "Ideas & Feedback Portal" and if it gets enough votes, our developers might consider adding the requested functionality in future releases.
