I'm sure I am just missing something simple. I would like to limit to just a single appointment selected, not multiple appointments. Just can't find any documentation on it.

You will need to customized the AppointmentSelectionBehavior of the ScheduleView, for more detailed information on the exact approach, please check the following help topic:
