Pivot grid always reverts to the default

If you change the setup of a pivotgrid from the default and then you use the configurator to change things, expanding or collapsing the rows causes it to revert back to including the default setting.

I am pretty sure this bug Changing the default axis causes the dimension to disappear on expand · Issue #3880 · telerik/kendo-angular (github.com) if not exactly the same, is caused by the same general problem. Expanding and collapsing the row dimensions causes all the original default dimensions to get added back into the displayed row dimensions even if you have removed them with the configurator.

my work around for now is to listen to the configuration change event and update the "default" row dimensions to match the ones in the configuration change event.

After consulting with our developers, the behavior is considered a bug that is separate from the provided issue, but might be closely related:
