I would like to replace the default "error" image that is used to denote and invalid column (see attached image). What's the best way to do so?

You may predefine the template of GridViewRow and modify the error indicator element, as follows:
The static XAML above is valid for Office_Black theme - if you want to modify it for any other theme you can browse all style files from the Themes folder of your personal installation.
