Is it possible instead of uploading files can I choose a file from the file explorer window and upload a hyperlink which has the file path to that file from a shared server.

The Upload template option will allow you to render a hyperlink in the upload list, but I am not sure I understand the rest of the requirement. What is supposed to happen when you upload that hyperlink? Once I am more familiar with the requirement, I will be happy to provide further information.
Sorry if I was unclear. I want to be able to open the select files window as shown in the template. Then when a file has been selected and clicked upload I don't want to upload the file (cause large files), instead I want to get the file path like "Users\Ronan\Documents\GitHub\Test\test.doc". Then I want to put in on a table as a clickable hyperlink and/or send it to a database.
If you could help or advise if it is possible to do this, this way I would appreciate it.

If I correctly understand the requirement, obtaining the file path when selecting a file is not allowed by the browser for security reasons. Check this Stackoverflow thread for further information on the matter.
