Modifying the report or item definition once the processing has started i.e., on ItemDataBinding or NeedDataSource, is not recommended.
If the used for the Table item schema is known and you need to hide certain columns, create the item using the Crosstab/Table Wizard. Then apply filters on the column groups, which can be previewed in the Group Explorer after selecting the Table item.
Other approach if the data is dynamic is to add a Table item to your report definition without any modifications. When you instantiate the report OnLoad for instance, find the Table item in the report's Items collection and based on the data, modify the definition. Finally pass the report instance to the ReportViewer control. For more details about getting the Table item from the report instance take a look at the Access items from report, calling application and Table help article(Access items from calling application).
