I have seen a handful of threads on the forum with the steps necessary to build a column chooser and one where it is mentioned that Telerik plans to build on in in the future, has this happened - is there now a built in column chooser that I am missing somewhere?
My trouble with the exising samples is that I need to have a default set of columns displayed then provide the ability for the user to show / hide other optional columns, the samples I have played with all start with an empty grid.

There is not a built in feature, but you could easy implement a one like shown in this help article. You have some visible columns and you can hide/show the columns in the columns collection.
