but the appointments will be stretched... (see attachment)
I use my own AppointmentItemContentTemplate with a TextBlock and a ProgressBar and set the MinAppointmentHeight="40"
How yould I fix this issue?

We are already aware of the described issue and it has already been logged in our backlog. I have also logged it now in our Feedback portal, so you can easily track its status on the following link:

I'm sorry for any inconvenience caused, however I cannot suggest you currently any workaround.
