I need to the Room 101 had only one Alex and Bob, Room 201 had a Charlie.

Hi Igor,
The described behavior of having different child groups for each parent group currently is not supported by the Scheduler. That why I would suggest to share your idea at Kendo UI UserVoice to allow other users vote for it. Most voted ideas are included in next Kendo UI releases.

How to add a column(row) or display resources without grouping?

Hello Igor,
Currently showing additional rows without grouping in view headers is not supported out of the box and custom solution would be needed. In current case I could only suggest to try extending the desired view and override the responsible methods in order to achieve the desired behavior. For example of extending the Scheduler build-in views you can check the following example in our CodeLibrary:
