Hello ,
In order to hide a particular series you can use the series.visible property. As for hiding it from the legend you can use the series.visibleInLegend property. See an example in this Kendo UI Dojo link.
As for hiding item from a column/bar series - generally null-able items are not displayed in column/bar series.
