You can check this article which explains how to modify the colors and brushes in Windows8Touch theme. Please note that you'll have to merge Windows8TouchResourceDictionary in your App.xaml in order to apply the modifications. Also you can find a simple project demonstrating how to change the colors in this forum thread.
