Sitefinity uses the kendo editor for comments, so it's initalized through their scripts. Is there some way to set placeholder text onto the editor AFTER the fact?

I am afraid that the editor does not support this functionality. You might be able to use the focus / blur events of the iframe / contentEditable element, but implementing this is up to the developer.
