I don't see why not. It doesn't even seem all that hard.
and the best part about drupal is, you could do it several ways!
you could override the default template of an entity to include kendoui components,
or even better, you could create your own module that grabs the data before the default template,
looks at it's fields for any entity, and creates custom Kendo components on the fly! that would be awesome!

It's not tough but yes bit tricky.
