On the 2011.3.1020.1040 beta version of the RadCartesianChart, how would the user interact with the chart to zoom in or out (e.g. draw a zoom rectangle, mousewheel, etc...). There seems to be hints of support for zooming, but I can't see how to make it work.

Zooming ans Scrolling functionality is one of our development goals for the upcomming Q3 2011 which will be released in the middle of November. Currently it is not available with the Beta version. As for the documentation - this topic regards the Pan and Zoom feature which was made for RadChart for Windows Phone. The responsible people are notified and this article will be excluded from RadChartingKit's documentation till its Zoom/Scroll feature is released.
