I suggest checking out this forum thread that already discusses this issue and provides links to possible approaches to this task. Most of them require a significant effort as jQuery does not provide pinch and zoom out of the box.
If you are willing to try another approach, you can use Kendo UI Mobile to add pinch and zoom to your app. You can check out our Pinch and Zoom sample app.
