How do I remove a bug from the list once it's fixed? Is it just setting the status to removed?

In most common cases setting the status to Done and setting the view for the screen to filter out bugs that are fixed (in Done status) should be enough. Using the shared views you can make different views to see bugs(stories, issues or risks) matching different criteria - more information about shared views and filtering.
I have attached a screenshot showing how to filter out fixed bugs and save the view for later usage.
