I don't think it's there now, but is there, or do you think there will be a day when the users can pick the fields/columns to be displayed in the Grid? I know some companies have built this for their 3rd party Windows Grids, but I didn't know how difficult it would be for Silverlight Grids, or if it would be possible in the near future?

Indeed we have plans to introduce such functionality and in the meantime please check this demo where you can choose columns using header context menu:
