I have installed Mono 3.4 for OSX and Fiddler2 for Mac from http://fiddler.wikidot.com/mono.
When I attempt to open Fiddler.app...it just hangs and I have to force quit it.
Any help is much appreciated.

Unfortunately, the Mono framework on Mac is quite buggy, and it's made worse by the "Gatekeeper" security feature which applies the first time you run a downloaded program.
If the Mac Mono Fiddler hangs on start up, try flipping between windows using the Command+Tab key combination; sometimes this "unwedges" the program. If it doesn't, try using Activity Monitor to kill the application and then restart it.
