Hi Paul,
You can modify text of the Delete and Edit button setting the required text in the Resource file of the Grid (GridResource.resx file). Check this help article for more information.
Other option is to predefine $.telerik.tGrid.defaults.localization['delete'] or $.telerik.tGrid.defaults.localization['edit'] on the client. Please note that this is applicable only for Ajax binding.
