Our company is trying to export data for users and for part of this we wish to give them the graph data we are showing on screen. We were wondering if there is anything in Telerik's sdk for taking either Telerik UI elements (or just graphs, or UI elements in general) and exporting them to any visual format file.

I would like to suggest you to take a look at diagramming framework.
As a start our online demos show several user scenarios we have implemented with the Diagrams:

The Diagrams do support export to XML and I suppose you could leverage this functionality.
