Hi ,
Are you experiencing this issue with the latest AppBuilder version (2.6.1) as well. If so, can you please list the steps you are following to change the color scheme on your side. This will allow us to try them on our side as well to see if we can reproduce any issues.
In the meantime I followed the steps outlined here and I was able to successfully modify a color scheme and change the editor's background and foreground on my side.
