While it is possible to define a CellContentTemplate there seems no way to give two different DataTemplates, one during editing of a row is active and one for normal (non-editing) state.
Is there a CellEditingTemplate coming soon?

This scenario is not supported at the moment. I have logged this idea as a feature request in our public Ideas and Feedback portal so you and our community can vote for it and raise its priority but right now we cannot commit a specific time frame for the availability of this feature as it is not part of the Q3 2013 product backlog.
