I would like to change the size of the text and the color of the watermark. And if possible the message of 'No items found'.
Can you help me?

Hello Francisco,
Unfortunately, at this point of the control's implementation, such separate customizations of the Watermark would not be possible. You can directly set the FontSize and TextColor of the whole control and this will affect the Watermark element so you can consider such step from your side. You can combine this with setting a SuggestionItemTemplate where you can change the DataTemplate of the item within the suggestion box.
I have logged a feature request regarding your requirement in our Ideas & Feedback portal so we can consider implementing a mechanism to modify the Watermark elements individually as well as the "No Results Found" message - AutoComplete: Modify Watermark element properties separately and AutoComplete: Expose property to easily customize the "No Results Found" message. I have added 1000 points to your account for bringing up the functionality to our attention.
