I noticed that the PivotTable control is not compatible with touchscreen tablet on Windows 8.
How do I use it better?

Could you, please, explain in more details what compatibility issues you are facing? And could you specify the browser type and version you are experiencing issues with?
I have just tested the RadPivotGrid official demos under a Samsung touchscreen tablet running under Windows 8 and I could not find any compatibility issues between RadPivotGrid and IE10, Chrome, Firefox and Opera browsers.
However, I have noticed one peculiar behavior that may have led you think of compatibility issue - in order to scroll the RadPivotGrid in Windows 8 touchscreen tablet browsers, one needs to interact with the horizontal or vertical scrollbar.
