This feature is not currently available in the Graphite and Mist simulators (how would one pinch with a mouse?). Fortunately, it is very easy to connect a device of your own to Icenium to test your project in real-time (including pinch / zoom gestures). To connect your device to Icenium, look at this page of the Icenium documentation.
Hammer JS is an awesome javascript library for handling touch events and includes a library to simulate pinch genstures (they use the shift key and the mouse). The feature works great in browsers, but I have not yet been able to get this to work inside the Icenium tools. They also have a library to show the touch points. Pretty cool. Check out http://eightmedia.github.com/hammer.js/ for more details. Perhaps the Icenium team can use this as a model. In the mean time, I'll see if I can get it to work.

Hello Bob and Bart,
This sound interesting and we will definitely check it out Bob.
But if you think it can be very neat feature to have in Icenium please log it in to Icenium Feedback portal so our community may vote and show us how must demand we have for that.
Greetings,
