Not sure if there is an easier way, but I was able to do what I needed by using applying my own CSS to the relevent tags of the control and overwriting the ones from the themes by using the !important clause for each of the settings. I know there are specific classes for Selected, Focused, etc... but there doesn't seem to be one for hover. In either case, my problem is solved.
