Is there a way to show only 1 item per page turn?

This feature would allow binding like this:
Left Page        Right Page
title                  Information about item
picture

Thus instead of going through 2 items at a time, it would only be 1 item at a time.

Also is there a fancy scrolling single-sided notebook control that functions like the book?

David, the book is based on Itemscontrol. So, each page of the book deals with an individual item from itemscontrol. The only way I can see it do what you want, is when both pages (left and right) are considered as "One" item of Itemscontrol.

Ben i right- currently you have to simulate this behavior of you split the content into two pages that when displayed will look like one.

We have this in the roadmap for image content. We will try to do it for the official Q1 release.
