Hi Shawn,
In order to search the values of full text in a Kendo Grid, you can set the Grid's DataSource Filters.
This older forum post shows one way to create a Search Box for the Kendo Grid, and it details further about manipulating the dataSource Filters. Another approach you could do is just have the search box outside of the Grid.
