I should be able to load fields from one document to another and use it as his own.
I can export first document as DocumentFragment and I can see fields from it but I can't change display mode for them e.g.

Hello Alexander,
I tried a few scenarios on our end, but everything is working as expected. Please look at the attached project. If you are using merge fields you can verify that the data source of the document is correct. More information on the feature is available in the Mail Merge article.
I am not sure if I fully understand your question, so it will be great if you provide us more information about your case or send us some code.
