Howdy. I know this component is fairly new... but is there anyway to set the Add and Delete commands? Basically, they need to do things in my view model. As far as I can tell, they seem currently hard coded to actually add or remove items from the underlying collection.

Indeed those commands are CommandButtonsVisibility.Add and CommandButtonsVisibility.Delete. You cannot replace them with setting a property. You can check this help article about the visual structure of the RadCollectionNavigator.
What you can do is to edit the template of the RadCollectionNavigator and replace the parts you would like.
